I made this recipe up, for the princess who loves purple, my sweet 3 year old, Zoe.
Ingredients:
2 TBS Olive Oil
1 Yellow Onion, chopped
2 TBS garlic
5 Summer Squash, sliced
5 Carrots, peeled and chopped
1 Sweet Potato, chopped
1 package of dried split peas
1 head of Purple Cabbage
3 C frozen Sweet Corn
Vegetable boullion, Oregano, and Marjoram to taste (I am bad with measuring)
Water as needed to make broth
In a large soup pot, saute onion, garlic, and summer squash in olive oil, until browning.
Add 2 TBS Vegetable Boullion and 3 c water. Cook until soft.
Pour mixture into blender. Blend well, and return to soup pot.
Add vegetables and spices to taste. Simmer, covered, for about 45 min.
